Wash and prepare all the vegetables and herbs.

Dice the aubergine and pepper and thickly slice the courgette. Chop the onion and de-stem the herbs.

Season the vegetables with half the herbs, a drizzle of oil, salt and pepper. Place them in the designated bag.

Use the designated machine to create the vacuum-seal. Place the bag in the oven, which has been pre-heated to 80°, and set the cooking time to 45 minutes.

Once the cooking time has elapsed, remove the bag from the oven. Pour the vegetables onto a serving plate and dress with the remaining herbs.
