Cook the egg white in a non-stick pan with the water, stirring often, until the mixture reaches a creamy consistency. Let it cool.

Put the banana, the xanthan gum in the mixer (you can omit it, the cream will probably be a little softer), any sweeteners (I use my protein hazelnut topping, so I do not find it necessary to sweeten the pudding) and the egg whites cream.
