I had bought the crabmeat for my boyfriend .. wanting to use it for a second tasty dish, the croquettes turned out to be ideal!

Melt the butter in a pan, add the chopped onion and let it dry. Then add a teaspoon of flour and stir the milk to form a sort of flavored béchamel.

Add the crabmeat and chopped vegetables, cook for a few minutes and add a little flour to thicken, but not too much.

Remove from heat and let cool. In the meantime prepare 3 bowls: in one place the flour, in one the breadcrumbs and in the third the beaten egg with salt and pepper.

Take the mixture and form balls: pass them in flour, egg and then breadcrumbs. Let it solidify in the fridge for about twenty minutes.

Heat the oil in the pan and fry the croquettes. Transfer them on absorbent paper to dry the excess oil.
