preparation
step 1
In a large saucepan bring to the boil two liters of water (if you use less water, adjust the salt proportionally).
step 2
Separate from the jar of the sauce with anchovies and truffles (which you will find already present in the box) the anchovy sauce that remain on the bottom, placing it in a separate bowl (do not worry about the remaining truffles left inside).
step 3
In a bowl mix the breadcrumbs with the oregano, add half a dose of extra virgin olive oil and mix it all together.
step 4
When the water for the pasta boils, add the sea salt crystals and the Pici, taking care to keep the water boiling to the minimum and mix the pasta gently after 12 minutes, to avoid breaking it.
step 5
Heat the extra virgin olive oil and garlic (which you have already prepared in the box) and the anchovies for two minutes in a frying pan over a medium heat, stirring with a spoon to completely melt them.
step 6
To obtain a perfect al dente cooking, cook the pici for 20 minutes (continue cooking for a few minutes if you want a softer consistency).
step 7
Drain the pasta and place it directly in the pan with the oil and the anchovies. Sauté for a minute on low heat.
step 8
Place the compound pici in a nest in the center of the dishes, sprinkle with the breadcrumbs and garnish with the truffle, distributing in 4 or 5 uniform portions over the pasta with the help of a spoon. Finally, add the remaining amount of extra virgin olive oil.
