The classic piadina was boring me a bit. So I decided to make this sushi with healthy ingredients
preparation

First we prepare the sauce. In a mixer add the milk flakes (drain the juice) together with the Greek yogurt (I used the 5% lean one which makes the sauce less bitter) finally a pinch of salt and blend everything

Prepare the aubergines. I decided to grill them without adding any spices or condiments. But you can very well add oil or spices to make them more delicious

Finally heat the piadina and stuff it with the sauce, aubergines and salad (I put the mayonnaise to add another flavor)

To best roll the piadina, use the transparent kitchen pelliccola, and let the piadina rest for a few minutes. Finally take chopsticks and enjoy this fake sushi.
