One of the first preserves that we will have fun preparing, in Puglia, in view of autumn and winter is the fig jam! Fig jam is one of the most nutritious jams made with fruit.
First clean, wash and remove the peduncles and the peel of the figs.
Cut them into quarters and set them aside.
Take a lemon and peel it with a potato peeler keeping the peel aside. Cut it in half and remove the juice keeping it aside.
Now pour the figs in a saucepan together with the water.
Put the sugar and lemon peel with the juice. Heat the whole thing by removing the foam with a slotted spoon to obtain a shiny jam.
Continue to stir so as not to attack the mixture.
When the latter has reached a temperature of 104 ° C, turn off the heat and let it cool a little. The skin that will have formed on the surface must be mixed with the jam.
After this step, pour it into jars (previously sanitized) with a jam funnel and leave 1 cm from the edge.
Screw the caps tightly, but not too tightly. With the heat of the jam the vacuum will form which allows it to be preserved for a long time.
