The couscous is a type of dish that I had the pleasure to discover only a few months ago and I fell in love with it right away. It can be an alteration to the usual pasta we eat every day. My version is vegetarian and I highly recommend you try it!
First cut the courgettes and peppers and blanch them for about 3 minutes with 350 ml of water.
Put the vegetables in a pan with a little oil, a clove of garlic and let them cook, while with the boiling cooking water we plunge the couscous into a bowl.
Leave to stand for 5 minutes with the transparent film put on top. After 5 minutes shell the Cous Cous with a fork. We salt the vegetables in a pan and leave aside.
Put the chopped tomatoes into a bowl and add them to the courgettes and peppers. Finally combine all the vegetables with the Cous Cous, mix and serve.
