The jam tart without butter and eggs has a 100% wholemeal base. Quick to prepare, it is lighter and lactose free.
In a large bowl mix the almond or soy milk with the apple vinegar and leave to rest.
Separately combine the flour, baking powder and turmeric. Mix with a fork to mix the ingredients.
When the milk combined with the vinegar has formed many small flakes (a sign that the curdling has taken place), add the sugar and the oil. Mix quickly with your hands then add a little to the dry ingredients.
Work the dough very quickly with your fingertips to make it smooth and not sticky. This short pastry needs no rest so we can immediately prepare the tart!
Cut a sheet of parchment paper so that it perfectly covers the bottom and the edges of the pan. Lightly flour the center, then arrange 2/3 of the pastry. Roll it out with a rolling pin until the dough is about 3 mm thick.
Transfer the pastry to the pan, pour the jam inside and spread it so as to obtain a homogeneous layer.
With the remaining pastry decorate the surface of the tart as you prefer. I did it in the most classic way, making strips of pasta that I then crossed.
