The homemade fettuccine is a format of fresh traditional Italian pasta as well as one of the many specialties that my mother taught me. In this video recipe I prepare them directly to her since she is much better than me! They only need eggs (possibly bio), flour (in this case we used Senatore Cappelli, obtained from the cultivation of an ancient wheat in southern Italy) a bit of passion and dedication to work the dough and the fettuccine are ready!

To prepare homemade fettuccine, place the flour in a fountain (I used Senatore Cappelli) on a wooden spianatoia. Add the eggs to the center. I advise you to keep aside a small part of the flour expected to be added later if necessary.

Gently beat the eggs with a fork and then add the flour by hand.

When you have combined all the flour continue to work the dough with your hands until you get a smooth and homogeneous ball.

Dust the work surface with a little flour and start spreading the dough with a rolling pin and then pull the dough by wrapping it on the rolling pin and spread it with your hands from the center outwards.
