Peel the carrots and slice lengthways. Slice lengthways again to julienne.

Dice the pumpkin. Prepare and julienne the spring onion.

Place the pumpkin and then the carrots in the sous-vide bag and season with the turmeric, marjoram, oil, salt and pepper.

Use the designated machine to create the vacuum-seal. Place the bag in the oven, which has been pre-heated to 90°, and set the cooking time to 40 minutes.

Once the cooking time has elapsed, remove the bag from the oven. Now, remove the carrots and put them to one side. Place the pumpkin in a bowl and mash it using a fork. Serve the purée with the julienned carrots.
