For this recipe we need decorticated red lentils, vegetable drink, sweet paprika (which I forgot to put in the picture), salt, extra virgin olive oil, lemon, a bunch of sage and rosemary.

First prepare the lemon flavored oil. Grate the lemon rind and mix it with the EVO oil. Time to prepare the recipe and it will be tasty. In the market there are ready, or to season the lentils you can use a simple extra virgin olive oil.

Tie the bunch of sage and rosemary with a kitchen string so that they do not disperse during cooking.

Cook the lentils, together with sage and rosemary, in unsweetened almond milk (of which we have already posted the recipe) or almonds and coconut.

Add a sprinkling of sweet paprika and a little salt at the beginning of cooking. Pour in the middle half the milk, adding it as needed so that the lentil cream remains thick. The lentils will cook in about 20 minutes. You could advance a little bit of milk

When the lentils are cooked, that is, soft, remove the aromatic herbs.

When the fire is off, season with lemon oil or, in the absence of this, with simple Evo oil.

Separately prepare a diced of stewed vegetables (I used carrots, peppers and aubergines) cut into small cubes.

To stew the vegetables I put a little water in a pan together with the granular vegetable nut, when it reached the boil I poured the cubes and added a little water when needed. When cooked and the fire is off, I poured a little oil (lemon juice).

To serve, since I had no coppapasta, I created a dome with a bowl and then I smoothed it with a knife. A round of stewed vegetables and voila! Lunch is served!
