A first colored dish and delicate, perfect to be enjoyed for a quick lunch in the cold months. Rigatoni served with a puree of pumpkin and a sprinkling of grated Parmesan cheese .. What could be more delicious to enjoy on a cold day?!? I used the rigatoni but you can use any type of pasta I suggest the short pasta, such as butterflies, feathers, etc. An easy recipe, fast, cheap and full of taste: what more could you want ?!

Clean the pumpkin by removing the peel and filaments, then cut into cubes.

In a pan, brown a clove of garlic with a tablespoon of oil, then add the pumpkin into cubes and the sprig of rosemary.

Blend with the white wine then add two glasses of water and simmer for about fifteen minutes, stirring occasionally, and covering the pan with the lid.

Meanwhile, fill a pot of water and bring to the boil to cook the pasta.

Drain the pumpkin and blend it with a mixer to obtain a purée.

Pour the pumpkin in a pan and season with salt and pepper.

Drain the pasta al dente and pour into pan to toss with the pumpkin.
