This recipe is a very old recipe, one of the poorest you can find. It is said to have been born in the ships' cabins where sailors used the very few ingredients available to cook the fish caught. It is called crazy water because the fish was cooked with sea water to not use salt which was a very expensive ingredient.
Squash and clean the redfish. Place a pan on the fire high enough to hold it.
Add oil, garlic and cherry tomatoes cut in half and cook for a few minutes.
Then add a glass of water and wine (The liquid will not have to cover the redfish but only reach it), a pinch of salt, olives and capers.
Now put the fish over the cherry tomatoes, cover with a lid and cook for a low flame for 20 minutes
Regular salt. Add parsley and basil. Serve with its crazy water.
