Wash hands and food.
In a bowl grate the cauliflower and the carrot, mix and reserve. Cut the pepper and the scallion into julienne and set aside.
In a frying pan over a low heat, toast the peanuts or dried fruit without salt or oil for 2-3 minutes. Once toasted, let cool and reserve.
Put a little oil in the frying pan and sauté and add the chives, the clove of garlic, and the julienne pepper. Saute for a few minutes and add the cauliflower with the carrot.
Continue stirring and add salt, pepper and spices to taste, cook for about 4-5 minutes and add cilantro or chopped parsley. Check cooking and taste.
Once ready, turn off and add more cilantro (or parsley) and toasted peanuts.
Serve warm or cold. It can be accompanied with tortillas or falafel, hamburgers or other protein source.
