A very simple vegan cheese made from almonds that will amaze you. In the aesthetics it resembles mozzarella, although obviously the taste is different, very delicate. To try!
Blend the almonds until they are reduced to flour. You can also buy almond flour directly, but in my opinion it is best to make it from dried fruit.
Transfer the almond flour into a saucepan, add the water, cornstarch, salt and oil to cold water. Jumbled up. Put the saucepan on the heat and cook, stirring constantly, until the mixture thickens.
You must obtain the consistency of the semolina. Moisten the glass or bowl - only the final shape will change - and pour in the almond semolina. Once cooled, cover it with a saucer and put it in the fridge for at least two hours.

You can slice the almond mozzarella and eat it with tomatoes like the classic Caprese, or use it to stuff sandwiches for a summer outing, or even to cut it into cubes to mix with a cold pasta salad.
