preparation

Peel the pears using a potato peeler.

Place the pears (without overlapping them) in a sous-vide bag and add the brown sugar, cinnamon stick and red wine. Use the designated machine to create the vacuum-seal.

Place the bag in the oven, which has been pre-heated to 90°, and set the cooking time to 120 minutes. Place the robiola in a bowl. Wash and dry the orange and, using a grater, grate the peel over the top of the robiola.

Using a fork or whisk, blend the peel into the robiola to obtain a creamy consistency. Once the cooking time has elapsed, remove the pears from the oven.

Using a tablespoon, remove the robiola cream and, with the help of a second tablespoon, create a quenelle, by passing the cream from one spoon to the other. Place a robiola quenelle on each plate alongside a pear. Finish with the wine syrup and cinnamon.
