BARLEY SALAD WITH VEGETABLES
Slice peppers, zucchini and tomatoes into cubes.
In a non-stick pan heat a little oil evo, then add the peppers and the zucchini, taking care not to overcook. For this recipe the vegetables should be left slightly raw.
Season with salt and pepper.
Meanwhile, cook the barley in salted water following the directions on the package.
Once cooked add it to the vegetables, adding the tomatoes too.
