The hummus, from the Arab culinary tradition, is a sauce based on chickpeas and tahini cream with innumerable possibilities of use: excellent to spread on toasted bread, to accompany vegetables or as in today's proposal to enrich a first course.
To prepare the cream based on legumes, drain well chickpeas already boiled (alternatively you can use the dried ones that, instead, will be previously cooked).
Transfer them to a mixer and add the rest of the ingredients (except for parsley, olives, tomatoes and water). Chop everything until obtaining a smooth and lump-free consistency, to which the cooking water will be added for a more creamy result.
Cook the pasta in plenty of salted water. Once ready, drain and stir in adding the hummus of chickpeas, tomatoes, black olives and finely chopped parsley to complete the dish.
