To the usual question, what do I prepare for lunch? today I answered like this: a very simple potato and green bean salad, perfect both as a single dish and as a light and tasty side dish!
preparation
step 1
Boil the potatoes for about 20 minutes (as soon as you are able to skewer them they are ready; they must remain fairly hard) remove the skin while still hot and let it cool aside.

Boil the beans in another saucepan, drain and leave them aside

Then add the onion (previously finely chopped and soaked in water) to the cherry tomatoes, oil, salt, pepper, oregano and chilli pepper. Let it sit for a few minutes to release all the juices.

At this point cut the potatoes into cubes (coarsely or as you prefer) and ..

Cover the salad with plastic wrap and leave it in the fridge for about ten minutes (time needed to cool it down a little)
