In a mixer insert the chicken breast cut into small pieces, onion, mustard, breadcrumbs (40g) and 2 pinches of salt. Operate until a compact and homogeneous compound is obtained.
Prepare the batter: in a bowl put flour, 2 pinches of salt, milk, egg white and oil. Stir with a whisk until a creamy, thick and smooth batter is obtained.
With the meat mixture form small balls and crush them with your hands obtaining ovals; pass them in the batter and then in the breadcrumbs covering the whole surface well.
Heat abundant oil in a pan and cook the nuggets on both sides; once cooked transfer them to a plate with paper towels to dry the excess oil. Enjoy them crunchy accompanied by your favorite sauces!
