A very tasty and rich first course, certainly effective but also very simple to make: they are the Orecchiette with pancetta and cauliflower!
Clean the cauliflower, depriving it of the outer leaves and cut it into small florets.
Boil it in abundant salted water.
When the cauliflower is cooked, drain it and transfer it to a dish to let it cool, then cut it into small pieces.
In the meantime prepare the onion fry: finely chop the onion and place it in a large saucepan with the extra virgin olive oil.
Light the fire and fry the onion. As soon as it is golden, add the diced bacon and sauté for a few moments.
Then add the cauliflower into small pieces and continue cooking for another 5 minutes, so that the sauce is well seasoned. Finally remove from heat and let cool.
Put a saucepan with plenty of salted water on the heat, cook the pasta (preferably a short one) and drain it al dente.
When it is ready, add the cauliflower and pancetta seasoning and mix well.
