Fillets of meaty and tasty anchovies obtained from anchovies fished along the Adriatic coast, entirely hand-made and preserved in extra virgin olive oil. Produced exclusively with olives coming from certified cultivations, the organic oil contributes to enhance the merits and flavors of a raw material of excellent quality. Bring two liters of water to a boil (if using less water, adjust the salt proportionally).

When the water for the pasta boils, add the sea salt crystals. When the water has boiled again, pour the spaghetti.

For a perfect cooking al dente cook over medium heat for 11 minutes, stirring gently from time to time (continue cooking for a few minutes if you want a softer consistency).

Take again the anchovy fillets of the Adriatic Sea and the half dose of oil previously put aside.

Keep the oil and two whole anchovy fillets, chop the remaining ones with the knife.

Heat the extra virgin olive oil and garlic in a pan and add the chopped anchovy fillets, making them melt.

Add the pine nuts and the raisins, mix everything with a spoon and let it toast over a low heat for 1 minute.

Then pour in the pan half the oil dose of anchovy fillets of the Adriatic Sea and 75 ml of cooking water of the spaghetti (about a ladle) and continue cooking for another minute.

In another pan heat the tomato sauce over low heat for 4 minutes, with half a dose of salt and half a piece of black pepper, stirring occasionally.

Keep a ladle of pasta cooking water (about 75 ml) aside.

Drain the spaghetti and then pour into the pan containing pine nuts and raisins. Sauté the spaghetti for 1 minute.

Meanwhile, pour the tomato sauce into the two plates.

Serve the pasta over the tomato sauce.

Add the ladle of previously advanced water to the remaining sauce in the pan and allow to thicken for 2 minutes.

Pour the spaghetti sauce, sprinkle the breadcrumbs and arrange the anchovy fillets of the Adriatic Sea (previously left aside) rolled on two plates.
