Heat a grill pan or an electric grill over medium heat.
Cut the zucchini into slices of 1 cm for the length. Grill the zucchini slices 2-3 minutes per side or until softened. Remove from heat and place on a plate letting them cool for 2-3 minutes.
Frull the zucchini, lemon zest, lemon juice, chickpeas, tahini, paprika, parsley and mint in a food processor, until a smooth and homogeneous mixture is obtained. Season with salt and pepper to taste.
To serve, transfer the zucchini hummus into a bowl and garnish with chopped fresh parsley.
