A delicious cake with very few calories, without eggs, without butter, gluten-free, lactose-free and lots of vegetables! Zucchini rich in water allow you to obtain a cake with a very soft and moist consistency that melts in your mouth. It is prepared in 5 minutes with a mixer without dirtying anything else
In a mixer, finely chop the courgettes together with the carrots and almonds. Start adding all the other dry ingredients in succession, sugar, flour, cocoa and baking powder.
When these ingredients are well mixed add the oil and the soy drink last. Mix very well for a few seconds until a homogeneous mixture is formed.
Transfer to a 22 cm pan. lined with parchment paper. Bake in a hot oven at 180 degrees for 30/35 minutes. Leave to cool well before turning it out.
